Dun dun dunnnn!

Okay, I'm sure you've all been waiting for it ever since I announced that there's going to be an awful lot of meatless cooking going on here. The anticipation has chilled you! It's terrifying! It's monstrous! It's...


 

TOFU


But, oh... wait.. that doesn't look that bad, does it? I've really grown to enjoy tofu, having been pretty ambivalent to its bland squidginess at first. Tonight I marinated some slabs of it in a sweet, slightly spicy sesame sauce and then baked them in the oven for a while until it was nice and brown and chewy outside, while leaving the inside fluffy and white. I've just served it with some garlicy sauteed spinach and boiled jasmine rice.It packs up nice, too:


You can also see the nice contrast in color of the baked tofu once it's sliced open like this. In my top  compartment, I've stashed another bunch of black grapes, a wedge of orange (they're so good together!), some extra sharp cheddar cheese (also to compliment the grapes, of course!) in a cupcake liner to attempt to prevent condensation, and last but not least-- a single bite of Hershey's Special Dark chocolate. How bad can that be?

I've also got a blueberry pie baking in the oven this very moment. It's definitely not as pretty as my mom's pies, but I'm sure it'll be great anyway.
