Dinner: Grilled marinated pork sirloin with soy-honey-vinegar reduction, baked sweet potato fries, and spinach.
Ingredients: This is one of those meals that sounds a lot fancier than it is! To make it, all I did was take some pork out of the freezer a couple hours before dinner to defrost and threw a couple smashed garlic cloves, a few glugs of soy sauce and EVOO, some fresh ground black pepper, two "caps" of vinegar, a generous drizzle of honey, and a pinch of parsley in with it-- that is, stuff I had around that I thought would be nice together. I was looking for something rich, with a subtle sweet-and-sour twist. Once it was all defrosted, I put the pork on my little fakie George Forman (opened, closed makes too much steam) and cooked it. Tender and juicy! The remaining few tablespoons of marinade was put into a pan and boiled hard until it was pretty sticky; I deglazed the pan with the drippings coming from the pork. I added a heaping spoonful of flour (and a little more EVOO) to make a roux, toasted it up, then added water and proceeded to make gravy. Because of the soy it was nice and dark and didn't need any extra seasoning. The sweet potato fries are just sliced up sweet potato coated in EVOO, salt, and pepper and baked on a sheet in the oven; you can find a million recipes online for them.
Verdict: The pork and reduction was really good; I find that the GF tends to make meat really juicy and seems to water down otherwise strong marinades when it cooks, so it was really nice to be able to have the benefits of the tenderness with the nice strong flavor it was marinated in. The little bed of steamed spinach under the pork was good too. It was steamed just the right amount and added a nice bitter lightness when eaten at the same time as the richer, earthier pork. I don't know what happened to the fries, I suppose I had too much oil on them. They were very soggy, but otherwise delicious. I will be trying to make them again for sure!
