Some (Don't) Like it Hot

Dinner: Jasmine rice with fresh steamed spinach, pan-toasted chickpeas, feta, black pepper, and oil.
Ingredients: Odds and ends and leftovers. I reheated ~1 C of rice from a previous dinner in the microwave. Then I threw a couple handfuls of fresh spinach in a tight pile on top of a bit of steamy water and a smushed garlic clove in a frying pan, and once they looked wilted put them on top of the rice-- there wasn't much fluid left. I crumbled a bit of feta I already had around on top of the pile. Lastly, I drizzled the pan with a couple teaspoons of nice EVOO and let about a handful and a half of chickpeas toast up. I peppered them right before taking them off the pan (nice and aeromatic) and just poured them into the bowl with the rice, spinach, and feta.
Verdict: I think a little more spinach and not quite so many chickpeas would be better in the future, though I really enjoyed it otherwise. On a hot day I don't really feel like eating, but this was light and full of nice flavors and textures (and a wonderful scent!) that reminded me how hungry I was. It would probably taste good chilled, too.
