Reimagined Classics

It's going to be another busy week, but I did grocery shopping this weekend so I'm prepared on at least one front, anyway. Tonight I wanted something fairly simple but tasty and cozy and good for getting rid of colds (oh no!).

 
Can you tell I like to eat out of bowls best?

This here is kind of my take on an exploded ravioli scampi, if that makes sense! It started out with butter/oil/white wine/garlic/lemon like a scampi, but I added onion as well, and after cooking the shrimp added a couple of big scoops of ricotta cheese and a wad of shredded spinach. The sauce is pretty thin and has a nice ricotta texture (some people don't like that; I guess you could probably use a less "gritty" cheese if you wanted to?) and an interesting creamy oniony garlicy lemon flavor that interacts really well with the sweet, delicate shrimp and bitter spinach. The pasta finished off the rest of the mac & cheese pasta.

All in all, a nice dinner that satisfied a lot of disparate flavor and texture cravings I've been having lately. And for desert? A fresh picked apple, of course!
