Finals Week

It's finals week, which means lots of studying and essay writing. That means not much effort left for cooking. In addition, since I'm going home on Saturday for winter break, I don't really feel like getting groceries that will just be more to carry back. Running low on supplies (or at least "easy" supplies) led to this:



Orange pork on a bed of fresh spinach with mixed-grain rice. The rice is kind of messed up (I should really just go ahead and get a rice cooker since I can NEVER cook it right on my own!) and sticky, but there are peas poking out of there if you can see them! The spinach was just chopped into bite-size pieces and sandwiched between the two hot parts of the meal, which will cook it well enough.The pork was stir fried with about 1/3 of an orange (the zest and flesh, not the pith) that I had kicking around, a big thumb of ginger that was getting green around the edges, some red pepper, soy, and hoisin. I think this would be a really good sauce for chicken or beef, too. The whole thing is topped off with a couple sliced scallions and black sesame seeds.
