Surf & Turf

To mitigate the dubious value of last night's dinner, I was craving something a little more fancy. I decided that what I really wanted was steak, maybe with a little crumbled cherve on top? Marinated and broiled? Spicy? Or maybe rich? Possibly Szechuan infuenced? Quite the dillema! Here's what I came up with:

Grilled ginger-hoisin steak topped with spicy garlic shrimp; olive oil & parmesan cous cous; cold butternut squash and sugar snap peas with lemon zest. Now THAT's a mouthful.

I made the squash the day before yesterday and like it better cold, and the sugar snap peas have been in my fridge for... uh... a long while now. I simmered the peas in a little water and some lemon zest and they were done. The steak was marinated and grilled. The shrimp were precooked and frozen. I have a hard time with precooked shrimp because they have a very different taste and texture than raw ones, so I don't like to make scampi or any other shrimp-centric dish with them. They were just tossed with a chopped garlic clove, a pinch of red pepper flakes, some salt, and oil, then put on the grill just long enough to heat through and get fragrant. The cous cous is just from a boxed mix.

Very satisfying, all said, and I have a big plate of leftovers besides. I'm glad to have cleared out some of my leftovers and older fridge items; now I won't feel so guilty for getting more veggies and such when I next get groceries!
