Shh... a "Midnight" Snack

Good for my college budget, I love tuna. Whether in a sandwich, mixed up with onions and celery and plenty of mayo, or else more simply mixed atop bread and garnished with fat slices of pickle and oozy American cheese, I get cravings for this stinky watery fish in a can at the oddest times. Often at night.

Lately I've been a big fan of tuna mixed with sriracha-- Thai chili sauce. It really balances the unctuousness of the mayo and "fishiness" of the fish in a really nice way. I ate this spicy tuna salad on zucchini rounds out of desperation (my bread had once again been stolen) a couple weeks ago, and this time (still breadless) I decided to have another go at the veggie presentation.

Now, there's something about lettuce wraps that fundamentally bother me. Maybe it's from all those diet guides that advocate them as if to say, "oh you want a sandwich? Put it on a salad, fatty!" And that makes me feel bad for lots of reasons, two of which are that 1) everyone should eat a sandwich if they want a darn sandwich and 2) salad is plenty good for its own sake and there's no reason to tarnish its reputation by painting it as the spartan alternative to what you really want to be eating. In this case I like the cool crunchiness of the Romaine as a foil to the soft and spicy tuna salad, and combined with some thin cucumber slices and a few cashews, the whole little bundle is a pleasantly complex but light late-night snack-- no sense of fatty sacrifice required.

  2. Sounds like you could use some FREE Wheat Thins from CVS this week with the printable coupon (link on the latest CVS post on my blog) - they go well with tuna too when you have no bread. :)
