Eatin' the Easter Bunny

What kind of rabbit does a vegetarian eat? A Welsh rabbit!


Welsh Rabbit (or rarebit) is basically just thick slices of toast smothered in a creamy sauce. I remember having something like this dish for dinner sometimes; we'd called it "cheddar cheese soup on toast"! Welsh rabbit is just the same, but this cheese sauce includes some nice grainy mustard and a few swigs of strong beer. It's so easy to make that even if all you've got for milk is soy (as I did), it still works-- I'd still recommend regular milk though!

We all made our own meals tonight, so I was free to have junky home food at an unseemly hour since I so desired. I made this loaf of bread with a special addition of about 1/4 cup of walnut "butter" (a couple stray handfuls of walnuts ground up into a paste in my mortar and pestle), not knowing how it was going to turn out, but it wound up making my bread nice and dark and rich tasting. Yum... especially smothered in this mellow, musky sauce.

  2. I used colby jack cheese, though cheddar is more traditional! It was very good, and something I'm sure I'll have again soon :)
