Dinner for Two

This isn't meant to be the most inspiring post, just a little illustration of how a vegetarian and an omnivore can have essentially the same meal without much fuss.

The inspiration for this meal is simply broccoli, roasted potatoes, and broiled chicken.


The chicken is rubbed with a blend of rosemary, paprika, salt, pepper, and olive oil. The broccoli and potatoes are fairly straight forward: boil them both, but pull the potatoes before their fully done, toss them with some seasoning and pop them in the oven with the chicken to get golden brown outside. Now of course, I don't mind just having spuds and broccoli most of the time if I'm making a standard American three-part dinner like this, but sometimes I want to get in on the meal as a whole:


BAKED TOFU TO THE RESCUE!! While the chicken and potatoes are doing their thing, put in some pressed tofu rubbed with a nice paprika sauce and let that broil too. Seriously, it's really good. Baked tofu gets a little tough all around the outside while staying tender and nice inside, and you sauce will really shine. On a day where I want to enjoy the flavor of a meal without sacrificing my ideals, this is a nice easy compromise!
