So confession: Jordan is literally the best. He picked me up from school this Tuesday, and what did he do on his day off? He cleaned. And COOKED.
Well, baked!
From scratch no less! He made an apple cake from this recipe using apples we picked ourselves just this past weekend while up in Maine. It was awfully good. Two "layers" of moist vanilla cake with big chunks of cinnamony apples sandwiched between and gracing the top-- perfect for desert, perfect for afternoon tea, perfect for breakfast (shhh!).
And anything cooked in a bundt pan is automatically the best. It had such lovely caramelization where the apples were pressed into the pan, and the "crust" is wonderfully crisp-chewy and so, so yummy. It didn't need any more than a sprinkle of confectioners' sugar over the top to look better than professional!
Thanks again Jordan-- not only for the (perfect) cake, but for the best two years of my life. Love you, bud!
