So, tonight was the first night since I've been back on campus that the boy hasn't been working well past dinnertime. I was looking forward to having a bud to eat with! We wound up buying a couple of really nice bone-in pork chops, Never Before Frozen (gasp!), earlier in the week just for tonight, so that's what was for dinner.
A baked pork chop topped with stuffing, garlic redskin mashed potatoes, cauliflower and broccoli with melted grated cheddar, and one adventurous beet wedge. I had a lot more beet for myself :). This was an attempt for us to recreate a Classic Mom Dinner... as described by someone who really doesn't know how to cook. "Generic marinade" indeed! Anyway, it was good, though there was plenty of room to improve and alter it in the future.
I think the only "bad" thing, and it's not even really "bad", about eating with the boy is that while our food preferences are pretty equal, our flavor preferences are not. My tastes have been described as "too subtle" and "weird", whereas I would retort that his are "too strong" or "boring". We're pretty good at making compromises, though.
Or else, you know, he winds up eating a plain ham and cheese on white bread while I make myself a toasted whole-wheat open-faced sandwich with raw baby spinach, seared marinated tofu, sauteed mushrooms, and beets.
It was way better than this picture might lead you to believe. Also, not just vegetarian but vegan! If you're not concerned with that, I would recommend a sunny-side up egg with a nice runny yolk and a generous sprinkle of salt and pepper in place of the tofu. Personally I'd still keep the beets on it (breakfast tomorrow?), but some grated cheddar might be nice instead.
Okay, maybe my tastes ARE kind of weird :).
