Today I had an hour-long break between classes right in the middle of the day, perfect for a decent quick lunch. With a little preparation, it's easy to have something fresh and nice to eat in only 20 or 30 minutes. See?
Here I've added mixed vegetables to a rice pilaf blend, which took probably 15 minutes total to boil the water and cook. I marinated a chicken drumstick overnight in my cheater "barbecue sauce" (ketchup, teriyaki, and sriracha to taste) and grilled it on my fakie George Foreman until it had those nice grill lines, then popped it into my hot toaster oven until it was cooked through. Garnished with a few spinach leaves, this was a hearty meal cooked quick on my second day of classes.
