Other than Sylvester's favorite saying, do you know what succotash is? It's a Narraganset dish made of corn and beans, especially lima beans. According to Wikipedia, it was really popular in the Depression as the ingredients were cheap and filling-- it was even made into pot pie. I remember hearing that my Great Grandmother really liked lima beans after eating a lot of them during that time. I was incredulous as a lima-hatin' kid, but now I think I'm a believer!
My version is a fancified version, made with onion, garlic, rosemary, roasted red pepper, butter beans (big limas), radiatore pasta, a couple handfuls of chiffonaded kale, and corn sliced right off the cob this morning. The crisp, sweet corn, chewy pasta, creamy beans, and fresh greens make such a great combination! I can really see how great this would be with a little bit of creamy sauce in a pot-pie. Yum.
